Rotini with Sun Dried Tomatoes and Artichokes

The second Scramble meal I made was the rotini dish.  I decided not to do the artichoke hearts as a separate dish and instead incorporated them into the sauce.


The twist of this dish was to boil the noodles and then drain quickly but not rinse. I then added goat cheese to the hot noodles and let it melt all of the noodles.  It added an extra dimension to the pasta.
The sauce was made up of onions, sun dried tomatoes, diced tomatoes and some rosemary plus the artichoke hearts.
Once the noodles were ready, I added the sauce and mixed up the pasta.  Again the dish was a little tangy.

First Scramble Dinner

A few days ago, I posted about the Six O'Clock Scramble.  I cooked my first meal of pan-browned pork loins with green beans with sweet potato fries.


The meal was pretty easy to put together and took about 30 minutes.  I fixed the sweet potato and yam fries first with my alligator slicer and stuck them in the oven.


The coating for the pork chops went pretty fast and they browned up pretty well.  I bought the thin sliced chops instead of the regular ones.  With the 3 minutes on each side, I don't believe that the pork would be cook through with the thicker chops.
The lemon juice and capers added some tang which is not my favorite but over all the meal was tasty.
It was a very colorful dish and I was full afterwards with no cravings for dessert.  The meal serves 4 so I have plenty of leftovers.

The Six O'Clock Scramble

I got a link to the Six O'Clock Scramble on a blog post and I went to check it out.


It is a great idea for dinner and the subscription price comes with weekly menus - recipes and shopping lists for a variety of dinners that take no real thinking.


I joined for the 10 day free trial and have gotten one week's menu and am off to the grocery store for next week's dinners.


I think this is a great idea to help me get out of my rut of eating the same things over and over again and also there is no mad dash at dinner time trying to figure out what to eat.  This is where I usually order pizza.


The first week's menu include:


Pan-browned pork loins with green beans with sweet potato fries,
Halibut with caramelized red pepper sauce with couscous and maple butternut squash,
Cheesy spinach and rice casserole and green salad with sliced onions, parmesan cheese, and dried cranberries,
Rotini with sun-dried tomatoes and goat cheese with steamed artichoke hearts with baby swiss cheese, and
Vegetarian sopa poblano with avocados with homemade pita chips and pomegranates.


The recipes also give do ahead hints as well as listing out all the nutritional information.  All the recipes have about 30 minutes of prep and cooking.  The menu also includes a grocery shopping list (everything you need) to save money from buying exactly what you need.


There are also other options on the website where you can customize the weekly menu and there are selections for food allergies and restrictions as well as picking specific items if you have ingredients on hand.


I'll be back to evaluate the menu after this week.
