Dishes over the Holidays

I had a multitude of dishes as my parents visited for over two weeks.

For Christmas dinner, we had our traditional prime rib roast, yams, potatoes, and apple salad.
Since they brought a roast duck as well as chicken, the carcasses were used to make winter melon soup with mushrooms.
One night we also had Black Bass poached with a cover of ginger and onions and some hot oil.
They also brought roasted pork which we had a few meals of.  The tricky part is the make sure the skin is still crunchy.
