I was playing around with the Nom Nom Paleo app and found this asian meatball recipe.
I pulled out the ground beef from J&J Grassfed Beef and added some fresh shiitake mushrooms, shallots, cilantro, and canned yams plus the tomato paste and fish sauce and made up big meatballs.
Mine were bigger than the recipe called for, but I wanted to fit them on one sheet. I baked for 20 minutes and turned and continued for another 10.
Delicious and I would make them again.
