Curried Carrot Soup

I have been on a total carrot kick and to use the last of my carrots (thank you Costco), I made the curried carrot soup by Rachael Ray.
After the last burning curry incident, I used the sweet curry powder from Penzey's.  It was much better - still a kick but not on fire!


I also got to use my VitaMix mixer that my mom got for me.  This sucker is on steroids and can grind and mix with ease.

  1. I love that recipe and use mild curry paste which seems to provide the right balance. If you want more bite, add a little cayenne!
