I got some dates (big ones) in the farmer's market bag and I used them as an appetizer for my sewing class.
The first thing to do is to pit the dates and put cubes of parmigiano-reggiano cheese in the dates.
The bacon needs to be cooked a bit to render some of the fat so it is almost translucent. If you brown the bacon, it won't be able to be wrapped around the date. Dry the bacon on paper towel and let cool to room temperature.
Take the cooled bacon and wrap a date and secure with a toothpick or a sandwich pick which is what I used because the dates were huge.
Place the dates on a rack in the oven after preheating to 375 degrees and heat for 10 to 12 minutes. The fat will drain into the pan from the rack and the resulting bite is very tasty indeed.
